
KAVIÁR SIBERIAN
Comes from Siberian sturgeon. It is a medium sized species weighing between 17 and 89 pounds (8 to 40 kg). It naturally occurs in the Siberian river basins (from the River Ob to the Kolyma River) and in the Baikal Lake basin. His caviar has a size that depends on the age (from 2.2 to 2.7 mm), and has a gray and amber color. It is a very versatile caviar with a fairly distinctive taste. It requires 6-8 years of the life cycle of sturgeon.

KAVIÁR DA VINCI
Comes from the Adriatic sturgeon, which is an Italian species typically found in the Adriatic Sea and in the main streams of the Padano-Veneto region, Dalmatia, Albania and western Greece. This caviar, with its fresh, intense and convincing taste, has a particularly delicate consistency and its eggs are characterized by a medium size (about 2.4 mm) and rather a clear coloration of brown to black shades. It requires about 10 years of the life cycle of sturgeon. Ideal for cooking.


KAVIÁR TRADITION
Comes from the White Sturgeon, which occurs in the North American Pacific coastal area from Alaska to Baja California. It is one of the longest living sturgeons, which sometimes lives for up to a hundred years, weighs over 1,700 pounds (800kg) and measures up to 19 feet (6 m). In addition to being a source of lean meat with a high protein content, its greatest value is still related to the extraordinary production of large eggs larger than 3 millimeters, with dark gray to black coloration. The taste of this caviar is particularly delicate and refined. It requires about 11 years of sturgeon life.
